Strawberry Pizza

Yes, Strawberry "Pizza." And it's good. VERY good!

I got this recipe from a friend when we were in CSUF's Multiple Subject Teaching Credential Program. She brought it to a housewarming party and I just had to have the recipe. Well, I've been staring at this recipe for over 10 years, wanting to once again taste its deliciousness, but too lazy to deal with the multiple steps in making this awesome dessert. Elizabeth said it was really easy, and you know, she was right.


Strawberry Pizza

crust:
  • 3/4 c butter
  • 1 3/4 c flour
  • 1/2 tsp salt
  • 1/2 c powdered sugar
directions:

  1. Mix like shortbread (knead with hands) and press into 9x13" cookie sheet with sides.
  2. Bake 20 mins at 350 degrees.

cheese filling:
  • 8 oz cream cheese
  • 2 eggs (I used 1/3 c pureed tofu instead due to son's egg allergy)
  • 1/2 c sugar
  • 1 tbs lemon juice (or squeeze 1/2 fresh lemon)

directions:
  1. Mix with electric mixer. Pour over crust.
  2. Bake 8 mins at 350 degrees.

topping:
  • Fresh strawberries. Remove stems and slice in egg slicer.
  • Warning: if they're too firm, they'll break the slicer.
  • Place on top of crust and cheese filling like pepperoni.

*glaze (see notes below):
  • 1/2 c sugar
  • 2 tbs corn starch
  • 2 tsp butter
  • 3/4 c water

directions:
  1. Mix sugar, corn starch and water over medium heat. 
  2. Add butter and continue stirring. 
  3. Cool and drizzle over topping. 
  4. Chill and serve. ENJOY!

*GLAZE NOTE: This recipe made A LOT of glaze and it was quite watery. Next time, I will use less sugar and definitely less water.
